Tahdig is a specialty of Persian cuisine: a crispy rice crust that forms on the bottom of the pot during cooking. It is made from rice, saffron, yogurt, or potatoes and is a highlight of any Persian meal. 📝 Ingredients: 2 cups of basmati rice 2 tablespoons of yogurt (for the crust mixture) 2 tablespoons of oil or butter 1 tsp salt 1 pinch of ground saffron Optional: thin potato slices or lavash bread 👨🍳 Preparation: Wash the rice thoroughly and soak for about 30 minutes. Cook in plenty of salted water until it is half-cooked (al dente), then drain. Heat oil in a pot, mix saffron with yogurt. Add potato slices or rice mixture to the pot – that's your tahdig layer. Fesenjan (خورش فسنجان) is one of the most exquisite and aromatic dishes of Persian cuisine. It is traditionally prepared with ground walnuts, pomegranate molasses, and often with chicken (sometimes duck or lamb). The sauce is rich, sweet and sour, and nutty – a true taste sensation. 🥄 Ingredients for 4 people: 400 g walnuts (finely ground) 500g chicken breast or drumsticks 4–5 tbsp pomegranate syrup (sharbat-e anar) 1 onion (finely chopped) 2–3 tablespoons of oil Salt, pepper Water as needed Optional: a little sugar if the syrup is very sour. 👩🍳 Preparation: Lightly toast the walnuts with a little oil until they smell fragrant. Gradually add water and simmer for about 45 minutes, until the oil from the walnuts is released. In a second pan, sauté the onion, add the chicken and fry. Add the meat to the walnut sauce and simmer for another 30–45 minutes. Season to taste with pomegranate syrup – make it sweeter or more sour depending on your preference. Ingredients (for 4 people): 300g Basmati rice 1 onion 2–3 chicken thighs or breast fillets 50 g barberries (Zereshk) 1 tsp sugar 1 tsp turmeric 1 tsp tomato paste ½ tsp cinnamon (optional) 1 tsp saffron threads (dissolved in warm water) Salt, pepper, oil, butter Preparation: Prepare the rice: Wash the basmati rice and soak it for 30 minutes. Ash Reshteh – Savory noodle soup with herbs Ash Reshteh is one of the most famous traditional soups of Iranian cuisine – a nutritious, vegetarian dish that is mainly served during the cold season or on special occasions such as Nowruz. Ingredients (for 4-6 servings): 1 cup dried chickpeas 1 cup white beans 1 cup green lentils 250 g fresh or frozen herb mix (parsley, spinach, coriander, leek) 150 g Persian noodles (Reshteh) 1 onion 1 tbsp turmeric 1 tbsp flour 3 tbsp peppermint oil (dried mint + hot oil) Kashk (whey, optional as a topping) Salt, pepper, oil Preparation: Soak chickpeas and beans overnight, then cook until soft.
