Tahdig – The crispy rice crust from Persia
Tahdig is a specialty of Persian cuisine: a crispy rice crust that forms on the bottom of the pot during cooking. It is made from rice, saffron, yogurt, or potatoes and is a highlight of any Persian meal.
📝 Ingredients:
- 2 cups of basmati rice
- 2 tablespoons of yogurt (for the crust mixture)
- 2 tablespoons of oil or butter
- 1 tsp salt
- 1 pinch of ground saffron
- Optional: thin potato slices or lavash bread
👨🍳 Preparation:
- Wash the rice thoroughly and soak for about 30 minutes.
- Cook in plenty of salted water until it is half-cooked (al dente), then drain.
- Heat oil in a pot, mix saffron with yogurt.
- Add potato slices or rice mixture to the pot – that's your tahdig layer.
- Pile the remaining rice into a pyramid shape.
- Cover with a cloth and steam over a low flame for approximately 40 minutes.
💡 Tip: The perfect tahdig comes off the bottom of the pot easily and has a golden color!
