Tahdig – The crispy rice crust from Persia

Tahdig is a specialty of Persian cuisine: a crispy rice crust that forms on the bottom of the pot during cooking. It is made from rice, saffron, yogurt, or potatoes and is a highlight of any Persian meal.

📝 Ingredients:

  • 2 cups of basmati rice
  • 2 tablespoons of yogurt (for the crust mixture)
  • 2 tablespoons of oil or butter
  • 1 tsp salt
  • 1 pinch of ground saffron
  • Optional: thin potato slices or lavash bread

👨🍳 Preparation:

  1. Wash the rice thoroughly and soak for about 30 minutes.
  2. Cook in plenty of salted water until it is half-cooked (al dente), then drain.
  3. Heat oil in a pot, mix saffron with yogurt.
  4. Add potato slices or rice mixture to the pot – that's your tahdig layer.
  5. Pile the remaining rice into a pyramid shape.
  6. Cover with a cloth and steam over a low flame for approximately 40 minutes.

💡 Tip: The perfect tahdig comes off the bottom of the pot easily and has a golden color!
