Ash Reshteh – Savory noodle soup with herbs
Ash Reshteh – Savory noodle soup with herbs
Ash Reshteh is one of the most famous traditional soups of Iranian cuisine – a nutritious, vegetarian dish that is mainly served during the cold season or on special occasions such as Nowruz.
Ingredients (for 4-6 servings):
- 1 cup dried chickpeas
- 1 cup white beans
- 1 cup green lentils
- 250 g fresh or frozen herb mix (parsley, spinach, coriander, leek)
- 150 g Persian noodles (Reshteh)
- 1 onion
- 1 tbsp turmeric
- 1 tbsp flour
- 3 tbsp peppermint oil (dried mint + hot oil)
- Kashk (whey, optional as a topping)
- Salt, pepper, oil
Preparation:
- Soak chickpeas and beans overnight, then cook until soft.
- Finely chop the onions, fry them, add turmeric.
- Stir in the herbs and flour and fry briefly.
- Add cooked legumes and a little water.
- Simmer for 30 minutes, then add the Reshteh noodles.
- Season with salt and pepper and serve with mint oil and kashk.
Tip:
Ash Reshteh tastes best the next day, when all the flavors have had time to infuse.
