Abgoosht (Dizi) – Persian Chickpea Stew

Abgoosht, also known as Dizi, is one of Iran's oldest dishes. This hearty stew is made with lamb, chickpeas, tomatoes, potatoes, and spices, then pounded and served – a taste of culture in a pot.

🥣 Ingredients:

  • 300g lamb or beef with bone
  • 1 cup chickpeas (soaked overnight)
  • 2 potatoes
  • 2 tomatoes
  • 1 onion
  • 1 tbsp tomato paste
  • Turmeric, salt, pepper, Limu Omani (dried lime)

👨🍳 Preparation:

  1. Sauté the meat with onions and turmeric.
  2. Add tomatoes, tomato paste, chickpeas & limes.
  3. Add water and simmer for 2-3 hours.
  4. Add potatoes after 1 hour.
  5. Finally, drain the soup, mash the ingredients and serve separately.
