Zereshk Polo ba Morgh – Persian saffron rice with barberries
Zereshk Polo ba Morgh – Persian saffron rice with barberries
Zereshk Polo ba Morgh is one of the most famous dishes in Persian cuisine. It combines delicate saffron rice with fruity-sour barberries and juicy chicken – a true feast!
Ingredients (for 4 people):
- 300g Basmati rice
- 1 onion
- 2–3 chicken thighs or breast fillets
- 50 g barberries (Zereshk)
- 1 tsp sugar
- 1 tsp turmeric
- 1 tsp tomato paste
- ½ tsp cinnamon (optional)
- 1 tsp saffron threads (dissolved in warm water)
- Salt, pepper, oil, butter
Preparation:

Prepare the rice:
Wash the basmati rice and soak it for 30 minutes. Then cook and drain as usual. -
Roast chicken:
Finely chop the onion and sauté it in oil. Brown the chicken pieces with turmeric, salt, and pepper. Add the tomato paste, sauté briefly, then add a little water and simmer for about 30 minutes. -
Preparing barberries:
Briefly soak Zereshk in water, drain, and gently fry in butter with sugar. Don't cook them too long – otherwise they will become bitter! -
Mix saffron rice:
Mix some of the rice with the saffron water – for the golden-yellow aroma. -
Serving:
Arrange the rice on a plate, sprinkle with barberries, and place the chicken next to it. Drizzle with a little melted butter – and you're done!
Tip:
Serve the dish with yogurt and fresh herbs such as mint or parsley for a perfect Persian taste experience.
